Now for this Digital Issue we are now on “The Best of Home-Cooked Halal Tausug-Filipino Dishes.”: SAMBAL.”
What is Sambal? Actually it is a Tausug appetizer listed in the handy Tausug cookbook “The Best of Home-Cooked Halal Tausug-Filipino Dishes,” written by Tausug Chef Abdulaziz H. Hamsain.
As an appetizer, Sambal is best eaten along with vegetable salad of sliced cucumber or it goes well also with chopped radish too. Hence, it would be nice to partake Sambal before one takes his main course.
In the absence of cucumber, Sambal goes along very well with sliced Green Mango that is really a mouth watering appetizer that can boost one’s appetite.
The ingredients as listed below can be easily bought in the market.
Likewise the self-explanatory procedure can be easily followed that neccisitates no further expertise in cooking.
Ingredients:
½ kilo shrimp relish (bagoong alamang)
3 medium size tomatoes chop
1 medium onion (mince)
1 medium clove garlic (mince)
Grind red hot chili pepper
2 tbsp sugar (white)
1 pinch grind black pepper
1 tablespoon peanut butter
Procedure:
- Wash the shrimp relish, strain then set aside.
- Saute the garlic, onions, black peppers and tomatoes.
- Add the shrimp relish or bagoong then mix well.
- Add peanut butter and sugar to taste.
- Saute well until the texture becomes gooey or thick.
*Best served during any meal as an appetizer.
